Blackberry + Chia Seed Jam

As discussed last month, chia seeds are a wonderful addition to a healthy whole foods diet. High in omegas, chia seeds are considered a long term energy source. Another fun aspect of these super seeds is their ability to form a gel when wet. This gel can be used in place of eggs in a recipe or even as a gelatin alternative. Today I'm going to show you how to make a very simple blackberry jam with chia seeds.

This recipe is based on one I did a year ago on my own blog. It was a huge hit and so I remade it for you guys here today with blackberries and in place of vanilla, I added some lemon. Get ready for some gourmet healthy toast for breakfast!

Ingredients

2 cups blackberries

3-4 tablespoons maple syrup

1 tablespoons squeezed lemon juice

2 tablespoons chia seed

Instructions

  1. In a high speed blender, blend the berries up with maple syrup and lemon until smooth, depending on your jam preference. I'm not a huge fan of the blackberry seeds so I blended until most of them were pulverized.
  2. Put the mixture in a saucepan and heat on medium to low heat for about 3-4 minutes while stirring occassionaly. Add chia seeds and turn down the heat to super low/simmer. Keep mixing and mixing while chia seeds start to gel up and jam starts to thicken. About 4 minutes. Turn off head and keep mixing until consistency is perfect.
  3. When cool, pour mixture into a glass or jar with a lid. Seal up the container and store in fridge for up to 5-7 days.
