Super easy to whip up, it can be prepped the night before — allowing you to wake up to a beautiful breakfast and a little bonus time to savor the morning and get prepped for the day ahead.

Make-Ahead Chia Seed Pudding

Make-Ahead Chia Seed Pudding with Banana & Coconut

Ingredients

1 overripe banana

2 Tbsp maple syrup

½ tsp vanilla

½ cup chia seeds

2 cups coconut milk

Fresh strawberries

Fresh blueberries

Coconut chips

Sliced almonds

Instructions

  1. In a large bowl mash the banana. Add the maple syrup and vanilla, then stir to combine.
  2. Add the chia seeds and mix, then stir in the coconut milk.
  3. Portion out into bowls or tupperware and chill for 4 hours to overnight.
  4. Top with fresh berries, coconut flakes, almonds or whatever you like best!
