National Donut Day is a holiday we’ll gladly get behind! This year we’re whipping up these Banana Donuts with Salted Caramel Glaze, a delectable recipe from our friends at Honeysuckle. Give these guys a go, and check out some of our other favorites here.
BANANA DONUTS WITH SALTED CARAMEL GLAZE
Donuts
Ingredients
½ cup puréed banana (from one banana; very well mashed works fine too)
3 Tbsp melted butter
⅓ cup brown sugar
1 tsp vanilla
1 egg
1 cup flour
½ tsp baking soda
½ tsp kosher salt
¼ tsp baking powder
¼ tsp cinnamon
Sprinkles
Instructions
- Preheat the oven to 350º F.
- Lightly butter or spray a doughnut pan and set aside.
- In a medium bowl whisk together the pureed banana, butter, brown sugar and egg until smooth.
- In another bowl, combine dry ingredients.
- Combine the dry ingredients into the wet until just mixed.
- Transfer to a large piping bag and pipe the batter into the prepared pan.
- Bake for 6-8 minutes, or until tops are lightly golden brown.
- Turn out the doughnuts onto a rack and let cool completely.
Glaze
Ingredients
¼ cup unsalted butter
⅓ cup light brown sugar
3-4 Tbsp milk or half and half
2 cups confectioners’ sugar
½ tsp vanilla extract
¼ tsp salt
Instructions
- In a saucepan over medium heat, melt butter and brown sugar until melted.
- Add half and half, salt, and vanilla extract
- Let mixture gently bubble and caramelize for 2-3 minutes.
- Whisk in powdered sugar.
- Stir until mixture is thick.
- Remove from heat and as it cools, it'll thicken up some more - add more milk (1 tbsp at a time as necessary).
- Take a donut and dip the top of it in the icing. Immediately sprinkle donuts.
- Let cool completely and enjoy!
