DIY: Go-To Granola Recipe

Her delicious fruited water recipes were such a hit, that we asked Dzung Lewis of Honeysuckle to come back for more! Once you master her DIY granola recipe you'll be asking yourself why you ever snacked on the store-bought stuff.

This homemade granola recipe is packed full of protein and all sorts of stuff that's good for you. Quinoa, flaxseeds, pumpkin seeds, oats, coconut oil, the list goes on!

I came up with this recipe combination because I was trying to think of a dish that would maximize healthy ingredients, while also keeping me full. I had seen quinoa used in an artisan granola at a cafe I visited some time ago, so I was quite intrigued to use it in my next batch. Lo and behold it was the perfect addition to an already tasty treat!

DIY Granola

DIY: Go-To Granola

Ingredients

Yields 12 servings

½ cup quinoa

2 cups rolled oats

½ cup almonds, chopped

½ cup walnuts, chopped

½ cup pumpkin seeds

¼ cup flaxseeds

½ teaspoon salt

½ cup dried cranberries

½ teaspoon vanilla extract

2 tablespoons honey

2 tablespoons maple syrup

1 tablespoon coconut oil, melted

Instructions

  1. Preheat oven to 300ºF.
  2. Rinse and drain the quinoa. Mix the dry ingredients (quinoa, oats, almonds, walnuts, pumpkin, and flaxseeds, salt) in a bowl but save the dried cranberries for later.
  3. Add the wet ingredients (vanilla, honey, maple syrup, melted coconut oil) into the mix. Toss well.
  4. Spread the granola mixture onto a parchment-lined baking sheet (or Silpat). Bake for 30 minutes, checking every ten minutes for even baking.
  5. Remove from oven and let cool completely. Then mix in the dried cranberries into the hardening granola clusters.
  6. Store in an air-tight container for up to two weeks.
