Snack Happy with DIY Trail Mix Cookies

TRAIL MIX COOKIES

Makes about 24 cookies

Ingredients

1 package Organic Chocolate Chippy Mix

6 tablespoons butter, room temperature

1 egg

2/3 cup peanut butter

2 tablespoons honey

1 cup rolled oats

½ cup mini pretzels

½ cup raisins

½ cup cashews

Instructions

  1. Preheat oven to 375 degrees.
  2. In a mixer on low speed, blend butter until smooth. Add egg, peanut butter, and honey and continue blending.
  3. Add dry mix and oats and blend on low until mixture forms a dough. Fold in pretzels, raisins, and cashews and mix until fully incorporated.
  4. Scoop dough into tablespoon sized balls and place onto a parchment lined baking sheet, and press down lightly. Bake for 12-14 minutes, or until edges are golden brown. Cool cookies slightly before removing from pan.
