These Flourless Chocolate Donuts Are So Easy It's Spooky!

Halloween is right around the corner and we’ve got one last treat for you! These delightfully frightful blender donuts, from our friend Amy Palanjian of Yummy Toddler Food, come together in just a matter of minutes.

Halloween brings lots of treats, but since our kids are plenty sweet already — and will likely get a bag full of candy from the neighbors — why not start the day with food that’s fun and nourishing? These spooky Flourless Chocolate Pumpkin Donuts come together with a quick whirl of the blender and less than 20 minutes in the oven…and will set the tone for the best Halloween yet.

Each donut packs protein and Vitamin A, and is made with minimal added sweetener, so you can feel good about a treat that fuels your little one with the nutrition they need. Adjust the level of pumpkin spice as you like, and choose the nut butter that works best for your family. And if the kids aren’t fully on board with pumpkin spice, feel free to omit it and trade in cinnamon — or just leave spice out all together and let the cocoa powder take center stage.

Flourless Chocolate Pumpkin Donuts

FLOURLESS CHOCOLATE PUMPKIN DONUTS

Makes about 11 donuts

Ingredients

½ cup nut butter (like almond, peanut or sunbutter)

½ cup pumpkin puree

3 large eggs

¼ cup honey

1 teaspoon vanilla

1-2 teaspoons pumpkin pie spice

¼ cup cocoa powder

2 tablespoons ground flaxseeds

1 teaspoon baking powder

Cream cheese and mini chocolate chips, optional

Instructions

  1. Preheat the oven to 350 degrees F and grease a standard size donut pan.
  2. Place all ingredients into a blender. Blend until very smooth. Fill donut cups about 3/4 full. Bake 14-16 minutes or until a cake tester inserted into the center comes out cleanly. (You can also use a mini muffin pan.)
  3. Let cool for a few minutes and use a paring knife to carefully coerce the donuts out of the pan. Let cool fully on a wire rack.
  4. To make eyes, create small cream cheese balls, flatten, and place onto donut. Top each with a mini chocolate chip. Store in an airtight container in the fridge for up to 5 days.
